Preparation
- First, peel and dice the onion for the stew. Heat butter in a pot and sauté the onion until translucent. Add the pork, brown it well, and season with salt and pepper.
- Once the meat is browned, deglaze with the vegetable broth and wine, bring to a boil, and simmer on low heat for about 30 minutes.
- After 30 minutes, add the peas, baby carrots, and green beans. Bring to a boil again and simmer for 5 minutes over medium heat.
- Meanwhile, peel and core the pear. Cut into small pieces and add to the pot. Let simmer for another 5-10 minutes until the vegetables are tender and the meat is soft. Finally, remove the pot from the heat, stir in the cream, and season with salt, pepper, and nutmeg.
