Preparation
- Mix the spice mixture, pepper, and oil and rub the meat well with it. Place in the refrigerator for about 2 hours to allow the meat to marinate well.
- For a perfect steak, you need the right core temperature -> 52-55 degrees for medium rare (pink inside) or 55-59 for medium. Insert a thermometer in the middle of the meat.
- Then place the steaks on a preheated grill (with lid) and grill on both sides until the desired core temperature is reached.
- Wrap the meat in aluminum foil and let it rest or continue cooking on the grill (but not directly over the coals) for about 6-8 minutes.
