Stegt Flaesk – Danish-style fried pork belly.

Ingredients for 4 portions

600 g Pork Belly
1 Pinch Salt
1 Pinch Pepper

Ingredients as Side Dish

8 Pcs Potatoes
4 Tbsp Mustard (coarse)
200 g Beets

Preparation

  1. Stegt Flaesk is besides Smørrebrød the ultimate national dish of Denmark and has been eaten for centuries. Cut the meat into (approx. 3-4 mm) thin slices and rub with salt and pepper.
  2. Then place the meat on a rack and put it in the oven (without preheating). Place a drip pan under the rack to catch the dripping fat.
  3. Set the oven to 180°C convection and first roast for 15 minutes, then turn and roast for another 20 minutes until it is golden brown and crispy.
  4. Let the cooked meat drain on kitchen paper and then serve.
  5. Traditionally serve with a parsley sauce and boiled potatoes as a side. Also add beets and mustard to the plate.
