Spareribs sous vide

Ingredients for 4 portions

2 kg Spareribs
1 TL Paprika powder
1 TL Honey
1 TL Salt
1 Pinch Nutmeg
8 Tbsp Oil
1 Pinch Cumin
200 ml BBQ Sauce
3 Pinch Pepper

Preparation

  1. Prepare a marinade from oil, paprika powder, honey, salt, nutmeg, pepper, and cumin. Rub the spare ribs well with it.
  2. Now, vacuum each rib individually in suitable bags using a vacuum sealer. Place the ribs in a water bath at exactly 62°C for 18 hours (a sous vide stick or cooker is needed for this).
  3. Before serving, remove from the bags, brush with BBQ sauce, and caramelize briefly at high heat (240°C) in the oven or on the grill.
