Preparation
- Prepare a marinade from oil, paprika powder, honey, salt, nutmeg, pepper, and cumin. Rub the spare ribs well with it.
- Now, vacuum each rib individually in suitable bags using a vacuum sealer. Place the ribs in a water bath at exactly 62°C for 18 hours (a sous vide stick or cooker is needed for this).
- Before serving, remove from the bags, brush with BBQ sauce, and caramelize briefly at high heat (240°C) in the oven or on the grill.
