Spanish omelette

Ingredients for 6 portions

2 EL Olive oil
1 Stk Onion, tdinly sliced
1 kg Potatoes, peeled and diced
1 Stk Bell pepper, deseeded, sliced
3 Stk Bacon strips, tdinly sliced
100 g Kabanossi, sliced
1 EL Olive oil (additional)
8 Stk Eggs, lightly beaten
0.33 Becher Finely chopped chives

Preparation

  1. Heat oil in a large, heavy pan. Fry onion and potatoes for 10 minutes, until the potatoes are cooked and golden brown. Remove from the pan and set aside.
  2. Add bell peppers, bacon, and kabanossi to the pan and sauté over medium heat for 5 minutes. Add additional oil, onion, and potato mixture and continue to fry for another 2-3 minutes, gently stirring everything together.
  3. Pour eggs over the mixture and cook for 10 minutes, until they are set. Brown the surface under a medium-hot grill. Sprinkle with chives. Cut into cake-like slices and serve.
