1 | Stk | Onion, tdinly sliced |
1 | kg | Potatoes, peeled and diced |
1 | Stk | Bell pepper, deseeded, sliced |
3 | Stk | Bacon strips, tdinly sliced |
100 | g | Kabanossi, sliced |
1 | EL | Olive oil (additional) |
8 | Stk | Eggs, lightly beaten |
0.33 | Becher | Finely chopped chives |
Preparation
- Heat oil in a large, heavy pan. Fry onion and potatoes for 10 minutes, until the potatoes are cooked and golden brown. Remove from the pan and set aside.
- Add bell peppers, bacon, and kabanossi to the pan and sauté over medium heat for 5 minutes. Add additional oil, onion, and potato mixture and continue to fry for another 2-3 minutes, gently stirring everything together.
- Pour eggs over the mixture and cook for 10 minutes, until they are set. Brown the surface under a medium-hot grill. Sprinkle with chives. Cut into cake-like slices and serve.
