Roasted pork knuckle

Ingredients for 4 portions

2 pcs hind legs
2 tbsp Salt
4 pcs Garlic cloves, pressed
3 tbsp Lard
500 g Pork bones
1 tbsp Caraway

Preparation

  1. Bring water to a boil with salt and caraway seeds, add washed pork knuckles and cook for about 60 minutes.
  2. Remove knuckles from the broth, scrape the skin across the meat fibers, spread a pan with lard and add finely chopped pork bones.
  3. Rub the knuckles with salt, caraway seeds, and pressed garlic, and roast in the pan at initially 220°C, then 180°C for about 2 – 2 1/2 hours, basting with some broth.
