Preparation
- Bring water to a boil with salt and caraway seeds, add washed pork knuckles and cook for about 60 minutes.
- Remove knuckles from the broth, scrape the skin across the meat fibers, spread a pan with lard and add finely chopped pork bones.
- Rub the knuckles with salt, caraway seeds, and pressed garlic, and roast in the pan at initially 220°C, then 180°C for about 2 – 2 1/2 hours, basting with some broth.
