Preparation
- Preheat the oven to 180 degrees Celsius, top/bottom heat, for the crackling roast. Peel and press the garlic.
- Rub the meat well with salt, pepper, caraway seeds, and garlic. In a pan, add water 1 cm high and place the meat with the crackling side down into the hot oven.
- After an hour, cut the crackling 1 cm wide. Then continue roasting the meat with the crackling side up. Pour the juices over it frequently. After 3 hours, the meat should be tender and the crust should be nice and crispy.
