150 | ml | Clear Soup |
Preparation
- Wash the herbs, dry them, and finely chop them. Peel the garlic, press it, and mix it together with the herbs and 4 tablespoons of olive oil. Season with salt and pepper. Preheat the oven to 180°C (fan).
- Cut the meat twice and unfold it. Cover it with plastic wrap and flatten it evenly with a meat mallet. Spread the herb mixture evenly on the roast, roll it up tightly, and tie it with kitchen string.
- Heat the remaining oil in a pan and sear the roast vigorously all around, then season with salt and pepper again.
- Place the roast in a roasting pan, add the roast juices from the pan, and pour in the clear broth. Cover the roast and let it simmer for about 1.5 hours. Baste and turn it over frequently.
- Remove the roast with herb filling from the oven, let it rest briefly, remove the string, and slice it.
