Preparation
- Wash the meat and pat it dry with a kitchen paper towel. Mix oil, pepper, and salt and rub the meat well with it.
- Preheat the oven to 200°C convection.
- Put the oil in a roasting dish, place the meat in the dish and roast for 130 minutes.
- During the roasting process, pour the fat over the meat several times to create a nice crust.
