Pork tenderloin skewers in Parmesan coating

Ingredients for 2 portions

400 g Pork loin roast
100 g Breadcrumbs
100 g Parmesan, grated
2 pcs Eggs
2 tsp Cafe de Paris seasoning mix
1 tsp Lemon juice
1 Pinch Salt
3 tbsp Clarified butter
6 pcs Wooden skewers

Preparation

  1. First, cut the meat into slices about two centimeters thick. Drizzle with some lemon juice and sprinkle with the spice mixture and a little salt.
  2. Then mix the breadcrumbs with the Parmesan, and whisk the eggs with a fork. Coat the meat pieces first with the breadcrumb mixture, then in the egg, and again in the breadcrumb mixture.
  3. Now skewer the meat on wooden skewers from the flat side and fry in hot clarified butter on both sides.
