Pork tenderloin on creamy scarlet runner beans with polenta blinis.

Ingredients for tde Blini dough

130 g Steirerkraft 1-Minute fine polenta
120 g Flour
250 ml Milk
35 g Yeast
1 Pc Egg
2 Pc Egg yolk
2 Pc Egg white
1 Pinch Salt

Ingredients Steirerkraft Käferbohnen ready to eat

200 g Steirerkraft Käferbohnen ready to eat
100 ml Steirerkraft tomato vinegar
0.5 Pc Onion
250 ml Whipped cream
1 Pinch Pepper
1 Pinch Salt

Ingredients for tde pork fillet

800 g Pork fillet
1 Pinch Pepper
1 Pinch Salt

Preparation

  1. For the blini dough, knead Steirerkraft 1-minute polenta, flour, milk, yeast, egg, and egg yolks together. Beat the egg whites with salt until stiff and fold into the dough. Let the dough rest for about 30 minutes. Just before serving, fry the blinis on both sides in a little oil.
  2. Marinate Steirerkraft Käferbohnen in a mixture of salt, pepper, and vinegar the day before. Finely dice the onion and sauté in oil. Add cream and the Käferbohnen. Cook until the cream reaches a creamy consistency. Season with salt and pepper.
  3. Cut the pork fillet into 12 pieces and season with salt and pepper. Heat oil in a pan and briefly fry the fillet pieces on both sides. Then bake in a preheated oven at 180°C convection for 3-4 minutes until done.
