Pork strips in pumpkin-tomato sauce

Ingredients for 4 portions

400 g Pork Schnitzel
400 g Pumpkin (witdout skin, witdout seeds)
125 g Crème Fraiche
1 pc Onion
2 pc Tomato
1 Pinch Thyme
1 Pinch Oregano
4 Tbsp Olive Oil
200 g Gouda (block)
0.25 tsp Salt
2 Pinch Paprika Powder

Preparation

  1. Cut pork schnitzel into cubes. Mix well with half of the olive oil, a pinch of oregano, thyme, and paprika powder, and let marinate for 15 minutes.
  2. In the meantime, dice the pumpkin. Wash the tomatoes, remove the stem, and dice. Peel and finely chop the onion. Grate the Gouda cheese.
  3. Heat the remaining olive oil in a pan. Sauté the onion until translucent, then add the marinated meat and roast for 5 minutes, stirring occasionally. Now stir in the pumpkin and tomato cubes, add a little water, and cook for 10 minutes.
  4. When the liquid has almost evaporated, stir in the creme fraiche, let it simmer again, then stir in 3/4 of the Gouda, melt it, and remove from heat. Serve with a side dish of your choice and sprinkle with the remaining Gouda.
