Preparation
- First, slice the cold pork roast without rind into approximately 7mm slices, but against the normal short direction, leaving the long fibers intact. Then place the pieces in a freezer bag and pound them with a meat mallet with the rough side until the fibers separate.
- Next, heat up the roast fat with a little water and add the meat fibers, cook for about 5 minutes and turn off the heat. The roast fat will now completely soak into the meat as it cools, making it juicy but not mushy.
