Preparation
- First, prepare the beer marinade. Peel and crush the garlic. Pick and wash the thyme, dry as needed, and strip the leaves from the stems.
- Mix salt, pepper, mustard, beer, thyme, and garlic together. Do not mix in the oil.
- Rinse the pork ribs with cold water and pat dry with kitchen paper. Place the ribs in a freezer bag and add the beer marinade. Massage the beer marinade into the ribs. Seal the freezer bag and chill for about 4 hours. Massage occasionally.
- Preheat the oven to 170 °C (338 °F) with top and bottom heat. Line a baking sheet with parchment paper. Remove the pork ribs from the marinade, briefly shake off excess marinade, and coat with oil or brush with oil.
- Place on the baking sheet (or grill rack with a grease catcher). Roast in the oven for about 40 minutes, until all sides are browned. The meat is done when it easily comes off the bone.
