Preparation
- First, score the skin of the pork loin with a sharp knife. Rub with salt, pepper, and mustard, and brush with oil.
- Place the meat in a fireproof pan and place it on the hot grill. Close the lid and grill for about 1 1/2 hours.
- Turn the meat several times and baste with the juices that come out. 15 minutes before the end of the cooking time, place the skin side up and pour some beer over it so that the skin becomes nice and crispy.
