Preparation
- Peel and finely dice the onion and garlic. Season the cleaned pork medallions with salt and pepper.
- Melt the butter in a hot pan and sear the pork medallions on both sides over high heat. Then transfer to a deep plate and cover with aluminum foil.
- Next, add the onion and garlic to the same pan, sauté and sprinkle with flour. Deglaze with white wine and cream.
- Add salt, pepper, paprika powder, and peppercorns and briefly bring to a boil.
- Reduce the heat, return the pork medallions with their juices to the pan and let simmer briefly. Adjust the seasoning of the sauce if necessary and serve.
