Pork medallions on zucchini carpaccio

400 g Pork fillet
3 Tbsp Oil for frying
1 Twig Thyme
1 Piece Zucchini
2 Tbsp Balsamic vinegar
1 Pinch Salt
1 Pinch Sugar
3 Tbsp Olive oil
1 Pinch Pepper
1 Pinch Salt

Preparation

  1. First, season the pork medallions with salt and pepper for the pork medallions on zucchini carpaccio. Then, fry them in hot oil with a sprig of thyme on all sides and keep warm.
  2. Wash the zucchini for the carpaccio, slice them thinly, and drizzle with a marinade made of vinegar, salt, sugar, and oil.
  3. Cut the meat into slices and arrange it on the carpaccio.
