Preparation
- Cut deep slits on the bottom side (bone side) of the pork loin, but do not cut all the way through.
- Then halve the onions, slice them, and spread them in a roasting pan. Place the meat with the slits facing up on top of the onions.
- Now slice the potatoes into thick slices and place them in a bowl. Mix vegetable oil, salt, pepper, and paprika together and toss with the potatoes.
- Place the marinated potato slices into the slits of the meat. Place some potato slices next to the meat and cook together.
- For the meat marinade, mix vegetable oil with salt, pepper, paprika powder, and Italian herbs and brush the meat with it. Cover the roasting pan first with moistened parchment paper and then with aluminum foil. Place the roast in the preheated oven and roast at 180 degrees for about 150 minutes. Then remove the foil and parchment paper and continue roasting for another 15 minutes at 180 degrees.
