Pork loin roast in the oven

Ingredients for 4 portions

1 Piece Pork loin roast
1 Pinch Salt
1 Pinch Pepper
2 Tbsp Mustard
2 Tbsp Oil
1 Piece Onion (finely chopped)
0.5 Bunch Rosemary

Optional Ingredients

125 ml Clear soup

Preparation

  1. Preheat the oven to 170 degrees (convection).
  2. Wash the meat, pat dry with kitchen paper, remove any tendons with a knife, season all around with salt and pepper, and spread with mustard.

  3. Heat oil in a pan and fry the meat on both sides or all around for about 4-5 minutes. Place in a baking dish, season with chopped rosemary and onion, and bake in the oven for about 20-25 minutes.
  4. Optional: If you want to serve a gravy with the roast, you can deglaze the pan with broth after frying, season, and you will have a gravy.
  5. Wrap the meat in aluminum foil after cooking and let it rest in the turned-off oven for 5-7 minutes.
  6. Before serving, slice the meat on a platter.
