Preparation
- Preheat the oven to 170 degrees (convection).
- Wash the meat, pat dry with kitchen paper, remove any tendons with a knife, season all around with salt and pepper, and spread with mustard.
- Heat oil in a pan and fry the meat on both sides or all around for about 4-5 minutes. Place in a baking dish, season with chopped rosemary and onion, and bake in the oven for about 20-25 minutes.
- Optional: If you want to serve a gravy with the roast, you can deglaze the pan with broth after frying, season, and you will have a gravy.
- Wrap the meat in aluminum foil after cooking and let it rest in the turned-off oven for 5-7 minutes.
- Before serving, slice the meat on a platter.
