Preparation
- Cut pork loin into medallions and lightly salt. Wash, peel, and briefly soak potatoes. Heat plenty of oil in a pan.
- Dredge the medallions in flour and dip in beaten egg. Grate the potatoes with a grater and squeeze out excess moisture.
- Bread the medallions with the potatoes and fry in hot oil until golden brown on both sides. Then dab with kitchen paper and sprinkle with a little salt.
