Pork fillets in potato crust

Ingredients for 2 portions

400 g Pork loin roast
2 pcs Potatoes
2 pcs Eggs
1 Pinch Salt
4 Tbsp All-purpose flour
500 ml Oil for frying

Preparation

  1. Cut pork loin into medallions and lightly salt. Wash, peel, and briefly soak potatoes. Heat plenty of oil in a pan.
  2. Dredge the medallions in flour and dip in beaten egg. Grate the potatoes with a grater and squeeze out excess moisture.
  3. Bread the medallions with the potatoes and fry in hot oil until golden brown on both sides. Then dab with kitchen paper and sprinkle with a little salt.
