Preparation
- Season the pork fillet on all sides with salt, pepper, and paprika powder. Heat oil in a pan and quickly sear the meat on high heat.
- Place parchment paper on a baking sheet and place the puff pastry on top. First, place the bacon on the puff pastry, then the pork fillet. Fold the puff pastry over and seal on both sides (to prevent the juices from escaping).
- Bake the pork fillet rolled in puff pastry at 180°C for approximately 45 minutes in the oven with top and bottom heat.
- Fill a pot halfway with salted water and add the washed and shredded broccoli. Peel and dice the kohlrabi and cook in a separate pot filled halfway with vegetable broth. Cook the broccoli and kohlrabi until they are tender on medium heat.
- To make the breadcrumbs, heat 50 grams of butter in a pan and toast the breadcrumbs until golden brown. Sprinkle the breadcrumbs over the broccoli. In another pan, melt butter and add parsley, then toss the kohlrabi in the mixture.
