Preparation
- Season the pork fillets with salt, pepper and cayenne pepper, fry in oil until half-done, and keep warm.
- Deglaze the pan with wine and add crème fraiche, peppercorns, and cook until creamy.
- Arrange the pork fillets on plates and pour the pepper sauce over them. Sprinkle with parsley.
