Pork filet with root vegetables and sauce

Ingredients for 4 portions

4 Pcs Carrots
1 Kn Celery
1 Pcs Onion
0.5 Pcs Orange
0.5 Pcs Lemon
800 g Pork Fillet
20 g Dijon Mustard
250 ml Whipping Cream
25 ml Red Wine
250 ml Vegetable Brotd
1 Tsp Game Spice

Preparation

  1. First, peel and chop the carrots, onion, and celery, and simmer in a pot of water for about 15 minutes. Add orange and lemon slices.
  2. Season the meat with salt, pepper, and Dijon mustard. Heat oil in a pan and sear the meat on all sides. Deglaze with red wine and add vegetable broth, cream, and game seasoning.
  3. Transfer the meat to a baking dish, arrange the vegetables around it, and pour the sauce over everything. Bake at 160°C for 60 minutes, turning the meat and stirring the vegetables 2-3 times during cooking.
