Preparation
- First, mix the eggs, flour, milk, Herbes de Provence, chili salt, and Parmesan in a wide container to form a dough. It should be slightly thicker than pancake batter.
- Next, pound the cutlets, season with salt and pepper, and cut them into pieces about 6×6 cm in size. Dip the cutlet pieces in the dough first, then coat them with breadcrumbs.
- Heat the oil in a deep pan and fry the cutlets until they are golden brown. Allow them to drain well on kitchen paper.
