Preparation
- First, heat the smoked ribs in a large pot with plenty of water. Meanwhile, peel and dice the potatoes and cook in salted water for about 15 – 20 minutes (depending on the size of the dice).
- Separate the kale into individual leaves, remove the coarse stems, pluck the leaves and blanch in salted water, then rinse in cold water to prevent the kale from turning gray.
- Melt the lard in a wide pot, peel and finely dice the onion, then sauté in the hot lard. Now add the blanched kale and the cooked potatoes, pour in the cooking water from the ribs (about 2 ladles full). Season with salt, pepper, and caraway, simmer for a few minutes. If desired, mash the potatoes slightly.
- Just before serving, remove the ribs from the water and slice them, serve with the kale and potatoes.
