Preparation
- Warm up the water for the bread dough and crumble the yeast into it. Stir with a fork until dissolved.
- Then sift the flour into a bowl, make a well in the center and pour in the yeast-water mixture. Add the butter flakes, salt, and eggs, and knead into a smooth dough.
- Cover the dough and let it rise in a warm place for half an hour, until it has doubled in volume.
- In the meantime, preheat the oven to 200°C (top/bottom heat).
- Sprinkle a work surface with flour and roll out the yeast dough on it. Place the ham in the middle. Brush the dough ends with water and fold them over the ham from all sides.
- Place the ham with the side with the dough edges facing down on a baking sheet lined with parchment paper. Whisk an egg and brush the top of the dough with it. Bake for 10 minutes. Then reduce the temperature to 160°C and continue baking for about 50 minutes.
- Carefully slice the ham roast – be careful, it falls apart easily – and serve with the bread crust.
