Preparation
- Rinse the meat in cold water and place it in a large pot with cold water. Peel the onion, cut it in half, and add it to the pot with the bay leaves.
- Bring the water to a boil, reduce the heat by half, and let the meat cook uncovered for 40 minutes. Remove the meat from the pot and score the top side with a sharp knife in a diamond pattern.
- Put beer, honey, soy sauce, thyme, and rosemary in a small pot, bring to a boil briefly, and brush the scored side of the meat with this mixture. Place the pork belly in a baking dish and let it cook in the oven at 220 degrees for 30 minutes.
- Brush the meat with the sauce repeatedly. Then remove it from the oven and let it rest for another 5 minutes.
