600 | g | small, firm zucchini |
500 | g | canned tomatoes |
200 | g | well-marbled smoked bacon |
1 | pc | large onion |
2 | pc | garlic cloves |
2 | bundle | parsley |
1 | tbsp | olive oil |
1 | pinch | salt |
1 | pinch | freshly ground black pepper |
100 | g | tomato sauce (can) |
Preparation
- Wash the zucchini, dry them, cut off the stem ends. Cut the fruits lengthwise into quarters and then crosswise into three pieces.
- Let the tomatoes drain in a sieve, roughly chop the tomatoes.
- Cut the meat into small cubes. Peel the onion and cut into rings. Peel the garlic cloves. Wash the parsley, shake dry and finely chop.
- Heat the oil in a casserole dish, fry the meat until crispy, add the onion rings, garlic, and parsley and fry everything for about 10 minutes over low heat.
- Then mix in the tomatoes, zucchini, and tomato sauce, season with salt and freshly ground pepper, and mix everything well.
- Cover and simmer over very low heat for about 20-30 minutes, stirring occasionally.
