Burgenland Schnitzel

Ingredients for 4 portions

4 Pieces Pork Schnitzel
2 Tsp Salt
4 Tsp Tarragon Mustard
8 Slices Cooked Smoked Meat (tdinly sliced)
4 Slices Gouda or Mountain Cheese
6 Pieces Mushrooms
50 g Flour
2 Pieces Eggs
250 g Breadcrumbs
4 Tbsp Cheese (grated, for sprinkling)
1 Tbsp Oil
3 Tbsp Fat

Preparation

  1. Pound the pork schnitzels thinly between plastic wrap. Clean the mushrooms, slice them and briefly fry them in a pan with oil.
  2. Season the meat with salt on both sides and spread mustard on one side. Place smoked meat and cheese on each schnitzel on the mustard side. Spread the fried mushrooms on top and cover with a second slice of smoked meat.
  3. Fold the schnitzels together, knock the edges of the schnitzels together and coat the filled schnitzels in flour, beaten eggs and breadcrumbs.
  4. Now fry the schnitzels in a pan with hot oil over low heat on both sides, each for about 5 minutes until golden brown.
