100 | g | Belly bacon, smoked |
300 | g | Puff pastry |
4 | Tbsp | Parsley, chopped |
1 | Tbsp | Clarified butter |

Preparation
- Rinse the lung roast with water and pat dry. Then remove any tendons/fat from the meat and rub all around with salt and pepper. Now add a little clarified butter to a pan, heat it up, and sear the meat in it from all sides.
- In the meantime, preheat the oven to 180°C and line a baking sheet with parchment paper. Wash, clean, and thinly slice the mushrooms.
- Roll out the puff pastry and spread the very thinly sliced smoked bacon slices on it. Sprinkle the mushroom slices and parsley over it. Now place the lung roast on top and roll it into the puff pastry.
- Press the pastry ends together well and brush the puff pastry with beaten egg. Place the pastry roll on the baking sheet and bake in the preheated oven at 180°C top/bottom heat for 40 minutes.
