Aromatic Char-Grilled Caucasus Kebabs

Ingredients:
- 2 lbs boneless lamb shoulder
- 3 onions, chopped
- 3 cloves garlic, minced
- 1 cup dry red wine
- 2 tablespoons vinegar
- 2 tablespoons tomato paste
- 1/2 cup olive oil
- 1 tablespoon paprika
- 1 tablespoon coriander
- Salt and pepper to taste
- Fresh parsley, for garnish
Directions:
- Cut the lamb shoulder into 1-inch cubes and place them in a large bowl.
- Add the chopped onions, minced garlic, red wine, vinegar, tomato paste, olive oil, paprika, coriander, salt, and pepper. Mix well.
- Cover the bowl and refrigerate for at least 4 hours or overnight to marinate.
- Preheat your grill to high heat.
- Thread the marinated lamb pieces onto skewers, leaving a small space between each piece.
- Grill the skewers for about 10-15 minutes, turning occasionally, until the lamb is charred and cooked to your liking.
- Serve the shashlik garnished with fresh parsley.
