Ingredients:

  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 jalapeño pepper, seeded and minced
  • 2 tablespoons chili powder
  • 1 tablespoon cumin powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)
  • 1 can (14 ounces) diced tomatoes
  • 1 can (14 ounces) kidney beans, drained and rinsed
  • 1 cup beef broth
  • Salt and pepper to taste
  • Chopped fresh cilantro, for garnish
  • Shredded cheese, for garnish
  • Sour cream, for garnish
  • Sliced green onions, for garnish
  • Tortilla chips, for serving

Directions:

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add the chopped onion, minced garlic, diced bell pepper, and minced jalapeño pepper to the pot. Sauté until the vegetables are softened.
  3. Stir in the chili powder, cumin powder, paprika, and cayenne pepper (if using). Cook for 1-2 minutes, allowing the spices to release their flavors.
  4. Add the diced tomatoes, kidney beans, and beef broth to the pot. Stir well to combine all the ingredients. Season with salt and pepper to taste.
