Sultry Georgian Beef and Rice Spiced Soup – Kharcho

Ingredients:
- 1 lb beef stew meat, cut into bite-sized pieces
- 8 cups beef broth
- 1 cup rice
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 teaspoons ground coriander
- 1 teaspoon ground fenugreek
- 1/2 teaspoon red pepper flakes
- Salt to taste
- Freshly ground black pepper to taste
- 3 tablespoons chopped fresh cilantro
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice
Directions:
- In a large pot, bring the beef broth to a boil.
- Add the beef and simmer for 30 minutes.
- In a separate pot, cook the rice according to package instructions.
- In a skillet, heat olive oil over medium heat, add the onions and cook until translucent, about 5 minutes.
- Add garlic, tomato paste, coriander, fenugreek, and red pepper flakes to the skillet. Cook for another 2-3 minutes.
- Add the skillet mixture to the beef broth. Simmer for an additional 10 minutes.
- Add the cooked rice to the soup.
- Season with salt and pepper.
- Remove from heat, add cilantro, parsley, and lemon juice.
- Serve hot with some crusty bread on the side.
