Ingredients:

  • 1 lb beef stew meat, cut into bite-sized pieces
  • 8 cups beef broth
  • 1 cup rice
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 teaspoons ground coriander
  • 1 teaspoon ground fenugreek
  • 1/2 teaspoon red pepper flakes
  • Salt to taste
  • Freshly ground black pepper to taste
  • 3 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice

Directions:

  1. In a large pot, bring the beef broth to a boil.
  2. Add the beef and simmer for 30 minutes.
  3. In a separate pot, cook the rice according to package instructions.
  4. In a skillet, heat olive oil over medium heat, add the onions and cook until translucent, about 5 minutes.
  5. Add garlic, tomato paste, coriander, fenugreek, and red pepper flakes to the skillet. Cook for another 2-3 minutes.
  6. Add the skillet mixture to the beef broth. Simmer for an additional 10 minutes.
  7. Add the cooked rice to the soup.
  8. Season with salt and pepper.
  9. Remove from heat, add cilantro, parsley, and lemon juice.
  10. Serve hot with some crusty bread on the side.
