Roast pork with crackling

Ingredients for 6 portions

1.5 kg Pork belly witd rind
1 tsp Salt
1 pinch Pepper
1 tbsp Cumin
3 pcs Garlic cloves

Preparation

  1. Preheat the oven to 180 degrees Celsius, top/bottom heat, for the crackling roast. Peel and press the garlic.
  2. Rub the meat well with salt, pepper, caraway seeds, and garlic. In a pan, add water 1 cm high and place the meat with the crackling side down into the hot oven.
  3. After an hour, cut the crackling 1 cm wide. Then continue roasting the meat with the crackling side up. Pour the juices over it frequently. After 3 hours, the meat should be tender and the crust should be nice and crispy.
