Preparation
- To prepare the pink roasted pork fillet, preheat the oven to 90 degrees Celsius with top and bottom heat.
- Remove the meat from skin and tendons and rub with mustard, salt, and pepper. Heat the clarified butter in an ovenproof pan and brown the fillet on all sides. Place the pan in the oven and let it cook for 70 minutes.
- Afterwards, let it rest in the turned-off oven for about 25 minutes, then remove from the oven, slice, and serve.
