Preparation
- Season the pork medallions on both sides with salt and pepper. Then, in a hot pan with oil, sear the pork medallions on both sides until browned.
- Place the medallions on a baking sheet lined with parchment paper and place a slice of Gouda on each one. Bake in the oven at 160 degrees Celsius with the top heat on until the cheese is melted and bubbly.
